My 7 year old granddaughter was over last weekend for a visit and she loves to be in the kitchen with me. We decided to make Viki's Granola Munchkins Recipe as a special treat for our movie night. This recipe is very easy-to-make and you only need 3 ingredients to make it. Regarding prep time, about 5 minutes, then an hour of refrigeration time and then another 10-12 minutes to roll the dough into balls. Once they've been prepared, place them into an airtight container and store them in the refrigerator.
Note: My mom has made this recipe in the past and has used almond butter instead of peanut butter and loves it made that way too. So, whatever your favorite nut butter is...you could probably use it to make the recipe.
Granola Munchkins Recipe
3 cups Viki's Granola (any variety)
½ cup of smooth peanut butter
½ cup of mini chocolate chips
Combine all ingredients in a mixing bowl, chill for 30-40 minutes in the fridge, then roll into balls. Store in an airtight container in the fridge.

I love using Viki's Granola by itself and in different recipes. I would love to try this recipe with almond butter.
