A few months ago I received a tin of the Moroccan Twist Spice Rub from the Sauce Goddess. If you have never tried any of their barbecue sauces, spices or spice rubs...you are really missing out. We love them! Along with our tin came this recipe for the Mashed Moroccan Sweet Potatoes and we just had to try it out!
Moroccan Mashed Sweet Potatoes Recipe
1 Tbsp. of Sauce Goddess Moroccan Twist Spice Rub
2 Tbsp. Salted Butter
1/2 cup Vanilla Yogurt (or coconut milk)
1 cup Chicken or Vegetable Stock
2 cups Water
2 Tbsp. Brown Sugar
2 Large Sweet Potatoes, diced into 2" cubes
Note: We used the vanilla yogurt and the chicken stock instead of their suggested alternatives.
Bring sweet potatoes to a boil in chicken stock and water. Cook until tender when pierced with a fork, about 15 minutes. Drain well to remove the excess water. In a mixing bowl combine the Moroccan Twist Spice Rub, sweet potatoes, butter and yogurt. Mash by hand or use a hand mixer to blend them to the consistency that you like. Place them in a serving bowl and serve with a tiny sprinkle of brown sugar and Moroccan Twist Spice Rub on top.
