I love making a wide variety of baked goods that use fresh bananas as one of their ingredients and this Banana Coffee Cake is delicious! It's a moist cake that is very flavorful and you can frost it however you like. If frosting isn't your thing then make a homemade glaze or dessert sauce and pour that over the top.
Banana Coffee Cake Recipe
1 cup all-purpose flour, sifted
1 1/4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1/4 cup vegetable shortening
1 large egg, well beaten
3 tablespoons milk
3 large ripe bananas
2 tablespoons butter, melted
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1 teaspoon grated orange rind
In a large mixing bowl sift together the all-purpose flour, baking powder, salt and granulated sugar. Cut the vegetable shortening into the flour mixture until blended. Mix together the beaten egg and milk; pour into the flour mixture; stir until well combined.
Lightly grease a 9" by 13" baking pan and spread the stiff cake dough in the pan. Peel and slice the 3 bananas and lay them on top of the cake batter. Brush the melted butter over the top. In a small bowl combine together the granulated sugar, ground cinnamon and grated orange rind. Sprinkle the crumbly mixture on top of the cake.
Preheat oven to 350 degrees and bake for 35 to 40 minutes or until the center of the cake is done. Let cool. Frost with your favorite frosting, cake glaze or pour a dessert sauce over the top before serving.
