Love unusual breads? If so...you have got to try my aunt's recipe for her homemade Tropical Mango Nut Bread! It does take some time to make but your efforts will be rewarded with a delicious tasting bread once it has been made and baked!
Tropical Mango Nut Bread Recipe
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 tsp. salt
2 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. ground ginger
3/4 cup vegetable oil
3 large eggs, beaten
1 tsp. vanilla extract
2 cups fresh ripe mango, peeled and diced
3/4 cup plump and juicy raisins
3/4 cup macadamia nuts, chopped
1/2 cup coconut flakes
non-stick cooking spray
Spray 2 loaf pans with non stick spray. Dust with flower and set aside. Combine flour, sugar, salt, baking soda, baking powder, cinnamon and ginger in a large bowl. Combine oil, eggs and vanilla in a medium bowl, mix well. Add to flour bowl and mix again. Fold in mango, raisins, nuts and coconut. Pour batter into loaf pans. Bake in a 350 degree oven for 45-55 minutes until done. Remove from oven and let it sit in the pan for 10 minutes and then remove from pan and let it cool on a wire rack.
This bread is great served warm or at room temperature. Enjoy!
